Dough is formed into precise segments or balls. Use the electric dough divider (ACE-36, 30-180g) for 100g balls or hydraulic dough divider (ACE-Y20, 250-1000g) for larger portions.
Third Step: Dough Moulder Machine (ACE-Y750)
Meets your shaping requirements after rolling press and dough rubbing. Performs complex rolling & shaping of bread dough. Once shaped, place the dough onto a non-stick baking sheet.
Fourth Step: Proof Machine
Allows setting precise temperature and humidity. Let the dough rise for 45 to 60 minutes. The speed of the rise varies partly based on your bakery environment. Once risen, remove the cover and score (slice) the top of each dough roll with a sharp knife about 1/2 inch deep and 3 inches apart to prevent cracking during baking.
Fifth Step: Rotary Oven (ACE-4632)
Steam adding system inside. Preheats the oven to 450 degrees F. Take the rack and bake for 15-20 minutes. No need to turn the baking sheet around as the rotary oven ensures an even browning. Remove the baking sheet when done and place the bread on a cooling rack.
